Pretty much everything lol. Tow more, higher payload, way more comfortable (COOLED seats baby!), highway cruise better, probably get better mpg's, way more power, etc.
That said, there's a ton of stuff the jeep can/will do that nothing else on the road (sans wrangler) can currently do, like...
Good to hear about the towing! I imagine the stability is from the wheelbase. Although I imagine anything would be an upgrade from my 98 GC in the handling department.

THIS right here is good stuff. Do you think your economy had something to do with the UHAUL imposed 55 mph limit vs. towing at highway speeds with the Ferd? I would love to hear how it did at something like 70-75 mph which is basically the minimum highway speed here in NJ lol

Please do not forget about the huge aero drag that something like a camper trailer has too. The difference between towing an open trailer vs. enclosed can be shocking.
