I did get a little rubbing today backing out of the driveway with full lock. Only time so far. I am driving it every day, albeit very carefully. Fingers crossed that my lift comes in soon.
Stock Overland wheels are 18" so the tires that I chose will not work. Here is a link to someone running 37's on stock Overland wheels, although they are 11.5".

Still waiting on my lift to arrive but I went ahead and had Discount Tire install my new wheels and tires. It drives great and I have not encountered any rubbing yet.

Judging by where the intake tubes go into the cowl it looks as though it would be possible to make a franken-snorkel kit out of it by merging it with the cowl intake from the Rugged Ridge AmFib Snorkel System. Would be a bit of an expensive experiment though.
Nitto offers a Ridge Grappler in 37 x 11.5. Looking at the specs it calls for a rim width of 7" to 10.5". Should work. Here is a link to a forum member running them on overland wheels.
