I managed to back my truck into a parked car, damaging my right rear 1/4 panel and taillight. I noticed on the body shop (independent, not a dealership) estimate that they will be performing “Pre and Post Scans”. Do I need to unmarry and remove my Tazer?

Being a body shop & not warranty you should not need to; however, I would recommend and put it in your console or glove box. They will connect up their scan tool and check all codes.

No need to unmarry it. Once it is disconnected no way to tell it was ever there

Remove it though. Because otherwise they will. They will need access to your OBD2 port.

If there are any codes they will most likely send your vehicle to the dealership if its not something simple that they can take care of.

Its not just about reading codes. In some cases certain modules need to be "married" to the car. I'm a bit ignorant to CAN bus details. But when I had replaced a heater control module on my wife's Volvo, the car had to be plugged into the Volvo computer before the module would work.
