I just bought a Gladiator and don’t know the law yet. Dose anyone know if we can drive with doors/roof off on the freeway or street?

Perfectly legal to drive on the street. Just make sure you get a set of mirrors to comply with local laws.

Most states only require 2 mirrors. Your center rear view, and a single side mirror. You can get a motorscooter mirror from an auto parts store for $10 that will screw in place of one of the cowl screws just in front of the door.

In regards to 'mirrors' as you are listed as 'Las Vegas' it would appear that regardless of which of the 3 states that could be in, you are AOK with just your center mirror as long as that view is not blocked.

Nevada:
Revised Statutes Title 43 Chapter 484D Code 430 - § NRS 484D.430
Side mirrors are only required if the view from the center mirror is obstructed. Mirrors must have a view of at least 200 feet to the rear of the vehicle
New Mexico:
Statutes Chapter 66 Article 3 Part 9 Code 845 - § 66-3-845
Side mirrors are only required if the view from the center mirror is obstructed. Mirrors must have a view of at least 200 feet to the rear of the vehicle.
Texas:
Statute Transportation Code Chapter 547 Section 602 - § 547.602
Side mirrors are only required if the view from the center mirror is obstructed. Mirrors must have a view of at least 200 feet to the rear of the vehicle.
