I'm running 315/70/17 (35s) BFG KO2s on my Overland. Living in Florida, it has not been an issue at all. Just average around 17.5 mpg City/Highway combined.
I have an overland on 3.73 and have absolutely no complaints with the way it accelerates. I specifically went with the method wheels in a 17" size and the 315s in a load range C to try to make it the lightest setup I could afford. I had the exact concerns you do.
One important thing to note...
Did you ever do anything about this? I took mine in to the dealer because the pedal was significantly softer than I remember when new, and it only has 10k miles. I also drove another Gladiator recently and confirmed something was definitely off.

Just got 315/70/17 (35s) BFG K02s installed on Method Race Wheels 703 with stock overland suspension.
No rubbing at all and they drive great! Considering how well it fits stock, I decided to move forward with just a leveling kit.

Just got quoted $3,161 for parts and labor from a Jeep dealership here in South Florida. I figured it would be expensive, but that's crazy.
Apparently 1500 for the lift and the rest is labor and fees. ?
