I tow 5k lbs at 60 mph for the same reasons. We have a 19.3 foot trailer looking at a 19.11 as an upgrade and yet will still only tow 60. We can do 75mph but the tires and axles aren't rated for all that and not worth the extra cost of seeing who getsa there first. I learned in over the road...
