I like the idea of a stronger engine, but I'm also plenty happy with the pentastar for my driving needs. Admittedly I drive like a grandpa and I work from home, so my driving habits are different than mosts. I had the pentastar in my JK, and now have it in my JT and in the wife's WK2.
If I were planning to do all that you have planned OP, I would get a Willys or an Overland with every creature comfort you can slam in there vs getting a rubi or mohave and ripping out all the features you paid extra for. Can't wait to see what you do, sounds like a great build.
Looks like i'm not the only one with a Grand Cherokee in the garage with the JT. My wife drives a '19 GC, super comfortable ride, much better mileage than the JT. It feels like a sports car coming off of our previous vehicles hah.

Purchased my '21 back in late july, at ~15XX miles. I WFH so no commute and wife has a WK2 for trips. Eventually it'll rack up some miles hauling toys or going on trips, so for now i'm enjoying the low miles while it last.
