The problem would seem to be that to fit coilovers they may have to modify the spring perches, frame, and/or tub, which would make it more unlikely. I think it's more likely that they'd put a remote reservoir shock on there, like in the higher end Mopar suspension kits.

IMO you should choose the Gladiator in nearly every instance where hard core 4x4 or price isn't a factor. It's just massively more useful due to the truck bed.
If hard core 4x4 is more important to you and you need the breakover and departure clearance for big rocks, deep washouts, big ledges...

It might also have to do with the forward gear ratios of the manual trans they had available, and what RPMs that runs the engine at on the highway under a trailering load. May be a cooling thing. Just guessing tho.
Because the Rubicon is heavier by quite a bit (due to the 4:1 tcase, front swaybar disconnect actuator, etc.), and the larger and heavier tire size on Rubicons. I think Rubicons are heavier by about 350-400 lbs across the board.
I assume they went with these Falkens because they needed to hit a specific rating for payload and towing that the BFG's couldn't hit at 1) the tire size they wanted and 2) the right price point.
