Like Higher_Ground I went with Toyo AT3s in 285/75r17s. I use the truck on a lot of low/no maintenance forest roads and I've never run into clearance issues flexing the truck out at full Iock. I also have the Kenda R/T 35x10.5r17 as a spare and have had no clearance issues with that either.
Toyo AT3s (285/75r17) on bone stock sport suspension and recon wheels. First set made it 25k and only lost 5/32 tread. If it wasn't for a small mishap on a job site the first set would still be on the truck. Second set already has 11k on them and still look new.

Finally got the new tires and some "new to me" wheels on the truck. It looks like a proper truck now.
Wheels are granite crystal JK Rubicon Recons (BS, width, dia., same as stock sport wheels) and tires are Toyo Open Country AT3 in a 285/75r 17 variety.
