Looking for suggestions taking into consideration the rubi stock rims are 7.5x17.

Picking up my JT Thursday and want to throw on a set of 35's right away. Really like the look of the Wildpeaks but have always been leering of running a mud tire in the snow or on icy roads. Did anyone run them last winter?
