I would say yes 3 step definitely if you don't have a lift. Mine has the Mopar lift and 35's and the 4th step is pretty well even with the tail gate. The steps have a very secure feel while going up and down.
Nice! I haven't seen that ladder before. This was my solution for bed access. Folds up and lays flat for transport when needed. It's also made in 2 and 3 step versions.
Oh yeah, you're correct. I had to put my bolt (off the 21) in the lathe and turn the shoulder back. The 20 JT was a normal bolt. Sorry I forgot about that.

Even with the 1.5 kit my front is still slightly lower than the rear. But there's probably 200 lbs hanging off the front of the truck. My bumper alone weighs 170 lbs I believe. It's 5mm thick steel.

It's really a matter of opinion as to how much you want to level the front. Also depends on how much additional weight you add to the front with new bumper, winch, etc. 1.5" works for me and many others but so does 3/4. As long as you're happy with the end result. It's a Gladiator so it's gonna...
New wheels would be the correct way to deal with rubbing but I like the stock wheels. I can't tell any noticeable difference in the turning radius with the stops moved out 1/8 of an inch.
