Won't know for certain exactly what all they'll do until the actual recall fix procedure comes out (supposedly in July), but a power steering pump replacement doesn't require the cab to be removed.

X2, a runaway winch is not good. Have you figured out why it did that yet? Incorrect connection somewhere? Sticking solenoid? Bad remote? What brand/model?
So to be clear you are verifying that the vehicle acts like it's doing a normal ESS stop but it fails to restart normally.
Tazers can sometimes cause odd glitches. Have you tried unmarrying and removing the Tazer to see if that stops the problem?
Your description is too vague to get an accurate idea of the problem. Is it just the engine switching off or is everything going dark? Is the vehicle exhibiting normal conditions for an ESS shut off, ie, do your dash indications stay normal with no warning lamps, radio and HVAC continue...
The level should be somewhere between the two marks, checked when cold. If you find yourself having to check the level when hot, it should be no higher than the upper mark.
With the coolant level having dropped, it would be a good idea to give the cooling system a thorough looking over to see...
Possible air pocket in the cooling system would be my first guess as well.
When you say the reservoir had a little coolant in it, was the level above or below the low mark?
