Do you have the current gear indicator enabled on or are you guessing it is going to 7th because it is driving fine. I would venture to guess that it is not going into 7th as often as you think it is.
My last gladiator had 35s with 3.73 gears and were I live is mostly flat and cruising at 75mph on the freeway it pretty much stayed in 6th gear and very rarely went into 7th unless I was going downhill but when go back to 6th gear at the bottom. It would never go into 8th gear.

Are you hand calculating or looking at the dash gauge? My dash gauge is off by 2mpg every time. I don't know of a way to correct it. On my F-150 there was a way to go into the settings and correct it so it was accurate for you vehicle to match your hand calculations.
