For wind noise issuses, make sure the sides of the top are tucked inside the plastic channel over the doors. Mine got louder. I tucked the top back in and much improved.
Also can try to reclamp the windshield header bar. Make sure the clamps are tight.

I have not taken mine offroad, but they are more closer to an all season, then an all terrain. I had the falken all terrians on my tj and they did pretty good offroad. That tread was a more agressive thread for an AT tire.

Have a 2004 tj rubicon. The low range does not fit well to the type of offroading i do. But the lockers are nice.

One other improvement over the JLU, is when it was folded back it blocked some of your veiw to the rear, even more if you had the hard trunk installed...
What about a WINDJAMMER for the JT? Seems like the JLU one would be a good start and on my JLU helped keep the backseat passengers somewhat dry.
I know the tj bimini tops can work with or without the door surrounds. Do the same on the windjammer.

Had a hard time finding any with just the soft top. Or even dual tops. New or used.
Checked into aftermarket tops new or used and was shocked at the prices. Over $1000. So that was not really an option...
