I am running 35"x12.5" on the stock 17"x7.5" wheels, with the Mopar 2.5" lift kit. The tires sit almost completely inside the stock fender flares. There is only very minor rubbing of the tire on the sway bar when at full steering lock and fully compressed suspension. Otherwise, no tire or wheel...
Another vote for the RokBlokz. I choose the RokBlokz XL Long for my Gladiator on 35" tires with Mopar 2.5" lift. The coverage is perfect. No mud/rocks can be kicked up on any paint. My doors and rear fenders stay clear of stone chips.

I can second the CCM Offroad mirrors (https://cmmoffroad.com/). They are fantastic mirrors with a great fit and finish. While they are one of the most costly mirror kits, I have never regretted that purchase.
