I I really like my Terra Grappler G2's 35 X12.5. They are super quiet and have done well on 6 BOH trails. They do get a little slick on pavement in wet weather. My daughter put them on her Wrangler (Same size) and now has 30K miles on them and they are still quiet. My vendor recommends the new Recon Grappler, and I may try those next.
That wet road rating I saw on some websites and now here from a few folks is something I will have to consider cause often I can be in lots of wet weather and traffic that stops quickly

I am about 17-18K miles on my Recons (37"s) and couldn't be happier. I will replace them with another set when the time is up, but they are wearing very well and slow for being under a heavy Jeep.

I have used them in just about every weather and road condition except for deep mud and snow and they performed amazingly. I am really happy with how they handle the rain (I live in the Seattle area) and the icy conditions. My vote is for the Nitto Recons.

From the "tire" stuff I've been reading, it seems like majority of tires get louder when they get worn down, especially like M/T's. I've had 35" BFG KM3's and they were really nice tires and I didn't think they were loud at all.

MT, hybrid and AT will get louder as the wear down, this is normal, but it is much worse with MT's. Regular rotation such as with each oil change or similar will help wear patterns.

I just have the Wildpeak AT tires and have been rotated every 5000 miles. I am going to try to take them to 40K and then replace them unless some super sale comes along or they just get to loud. My wife commented again this evening how loud they have gotten.
