Given the longer drives at highway speeds, I'd say you'd be fine to stretch the intervals to 7500 miles. That's going to work out to an oil change about 3X a year for you.
It very much depends on your driving habits and your annual mileage.
If you do a fair amount of short trips and city driving with lots of idling and starts and stops, then every 5000 miles is probably a good number for you.
