    There's no way you have negative 5 degrees on one side and positive 2 degrees on the other, that's a 7 degree caster split. You can't really adjust caster split on a solid axle. Your readings should be pretty close to the same from side to side, otherwise your measurement method is flawed or...

    Did you orient the spacers correctly on top of the springs? Also see if your springs are bowed and/or rattling against the bump stops.

    It would be a bit less of a headache to tackle at least all the stuff on each axle at the same time. Loosening the control arm bolts helps to drop the axles down enough to get the springs out without a spring compressor, so might as well install the arms after the springs so you're not...
