Going larger with tire size will impact towing weight. If I use the 10% rule ( 10% weight on the tongue) you are pulling a 6000# trailer. Going bigger will hurt towing performance.
I would be more concerned about gearing going bigger with tires. YOU should be able to run a P metric 35 without...
Things to check:
- Are the new tires out of round? simply jack up the rig until you can see under the tire. Use a socket as a gauge under the tire and rotate it by hand. If it is out of round replace the tire.
- Are the wheels true? Did the shop bend a wheel during installation?

You could run JK or JL/JT axles with a 5 or 5.5 inch backspace wheel and have a great track width and keep all close to the body. Then again a little sheet metal work and those fenders could be stretched enough to mostly cover the width of wide tires and axles.
With an old rig like that make sure to box the frame. if you are upgrading the engine. Weight and torque are not you friend with an old flexible frame.
