Have you done the clutch recall yet? If not, you can get a new clutch from Jeep for free. It may feel a little better since it will be new and I think they made some slight revisions since 2021. Plus, it will save you a lot of $$$.

A lot of the manual trans hate is due to the factory gearing. I had a 2021 JT Mojave manual and it felt wrong with the 4.10 gears and stock 33s. Gaps between gears were to big and 6th gear was not usable without over lugging the engine.

We have a JLU with the 4.88 gear option. Had to custom order it. The 4.88s are perfect with the stock 33s and manual transmission.
Personally, I wouldn’t consider 4.56 gears. If regearing - I would go 4.88s for 35s, 5.13s for 37s.

Congrats! Maxtow is a great package. Katskin makes leather seats for Wranglers and Gladiators. They usually are reasonably priced if you find a good installer near you.
I also recommend keeping it stock for a bit to see what you really need. A lot of people go crazy with a big lift, tires...
