Knowing the quality of RR, I’d pass. The stock fenders are much better. If you really
need the room, consider steel- metalcloak makes really high quality fenders
Super interested in the canvas canopy. It could bridge the gap between covering up the dogs/gear for camping and spending a few thousand extra for an aluminum shell
I had a bone stock 2013 2 door paid off, but I don’t want two vehicles, and got a great trade in. I was also single when I got it, so no ac hasn’t been very popular with the wife... But the JT works for wheeling, I can haul my tools, and future kids. Perfect upgrade for home and work.
RC and Rancho are garbage. You will regret it. Teraflex makes decent stuff, but personally I would recommend Rock Krawler, if they carry over the overland-specific lift they made for the JK. Worth asking the question because it was designed for your exact situation.

Installed my aFe Apollo GT exhaust- fantastic sound. Had a cheaper ($350 ish) exhaust on the JK and the difference in quality is very noticeable, particularly the drone on the highway. Glad I spent the extra cash this time
JCR has nice half doors- not tube, but still nice. Real hinges, great hardware, paintable, but about $1200 for a set

Just picked it up, so I got the easy stuff out of the way- Stubby antenna, tonneau, door sills, screen protector.
After having my JK for the better part of last decade, switching to the JT made me realize how much I beat that thing up... Out of love, of course. But I think I’ll take it easier...
