I recently did a 2 hour drive to Indiana mostly highway, cruise control set at 70. By the time I got back home my dashboard says I averaged 21 mpg. Thats on a sport S with 8speed, hardtop, rubicon shocks/springs and 35" tires. Around town Iam getting 18-18.5.
Iam guessing most accessories especially rims and tires are made in China. Check out alibaba dot com to see what all those accessories get sold to the middle man in US before they are delivered to your door. I already have the jscan for about $90. The point is, it would be relatively easy for Jeep to make our rides capable of calibrating tire size so why not do it? Especially since the bronco is knocking on their doors.
Dear Jeep, make an ECM that can accept changes to wheel diameter via dashboard settings. Millions of jeep owners will rejoice and it will be one more thing to dissuade them from crossing over into bronco territory.

I just put 35's on last week and had been getting 17.5 around town with corrected speedometer. I broke into 20 mpg today traveling a long flat stretch doing 60 with cruise control and no air. Pretty unbelievable considering my 2 door jk with 33's averaged 18.5.

We keep our garage pretty tidy because we both park in it. I had to modify my homemade shelf when I bought the gladiator because it's so long so it just barely fits length wise.
I suggest starting in the morning around 7am when it's about 20 degrees cooler. It is a pretty easy install...
It took me 3 hours on a friday after coming home from work and that was in my garage in 95 degree humid Ohio weather, completely drenched in sweat. I drank about 5, 24 ounce glasses of water during the install. I dont think I would pay even $150 for someone else to do it.
Inspired by your build, bought the same tire and wheel setup and scored some cheap rubi shocks and springs. Installed the shocks and springs only so far and then the wheels. Rides really nice so far but have something in the drivetrain rattles over bumps. I didnt use a torque wrench on anything...
Good heads up about the cleaning aspect. I've already noticed that the JL windshield seems easier to clean from the inside vs the JK due to the positioning of the rearview mirror.
I couldnt do that job for sure and am thankful for healthcare workers, police, fire and military, fast food workers, grocery store workers, department store employees etc. I think our country needs to harden up a bit though. Police probably deserve the biggest discount if we're splitting hairs...
