I have the RSI Evo Adventure and like it. It’s tough, looks much better than other stainless canopies (IMO) and does everything I need it to. I don’t personally think the Alu-cab looks very good on the Gladiator.
Rusty's is also an option at 2". Keeps some rake.

This. You can also purchase the springs a la carte from Clayton and use the Mopar 2” LCAs and Mopar 2” sway bar end links for a cheap spring-based level kit. ~$300 or so.
Looks great. You may not *need* to loosen the control arms to install the coils, but you should loosen and re-torque them with the vehicle on the ground. This will remove the bind the bushings are currently under as the ride height was changed with the arms fully torqued.
I use them with mine and I have had no issues with leaking, etc. The Sunrider does push into the handles at one spot, so YMMV.

KMC’s Offroad Tech series of wheels (and I am sure some of their other offerings) come in a 17x9 +18. You will be close to completely under the fender with a 11.5 width tire, and pretty close to flush with a 12.5. I get a small amount of poke with 12.5 inch width (wider track axles).
