5deg is spec, so there's not much to complain about what the shop did there. Did I miss where the OP talked about how the adjusters were set? Sure, more caster will have more on-center feel, but I'm not sure if I'd go throwing parts at 1deg of caster before the camber is fixed. Until then...
So, they just changed the toe to zero. The caster around 5deg is good for highway. Camber is way out.
Was this alignment from a separate shop, or just part of the lift install? They corrected the steering being off-center. I doubt they touched the caster. The camber issue isn't from the lift...
It would appear, that the 5" radio is history. Base Sport models now come w/ the 7" unit.
With good, full function aftermarket kits available now, at fairly reasonable cost, there's no way I'd spend more than $400 on a 7" upgrade.

You can get cut/drilled L-track kits for the JT for less than the OE stuff. Then you can use any number of standard anchors and even mounting nuts and studs for permanent equipment.

When we were doing NASA racing, teams were using 440, not GMRS at the track. Consider getting your Amateur radio license. There are some cool, inexpensive dual band rigs that can also run GMRS (license still technically required).
