Are you able to air back up on your own (ie, portable compressor)? If so, I would air down to about 17-18 pounds, that will provide a bit of added comfort.

Since they are charging you to do it, I wouldn't accept "good enough"......your speedo should match GPS. I've got my Tazer set at 34.98" for my 35" AT4W's and it is dead on.
I installed mine a year ago. Once installed, I tightened them using a hex wrench and have not had anything come loose. Of course, I keep that same wrench in the Jeep in case I want to remove them, but haven't really needed to yet (even with a Moab trip last May). Might do that when I go back...
When I changed to Falken AT4W's (35"), I had to set my Tazer to 34.98" in order to have my GPS and Speedometer identical. I'd consider that 0.02" of difference inconsequential.
