Build date which means what exactly?????

So I ordered a Jeep for the first time ever and I got a build date of 10/20/21 what exactly does this mean? I know it’s pretty obvious but does that mean they finish it that day or how long does the car stay in the build status? Can anyone explain a little further please and thank you!!!!

I got this news from my dealer today
“Good news. The Gladiator has moved to E status. Basically it is moving down the assembly line now.”
