Laptop Tray?

I am going on a cross country trip and was looking for a way to mount a removable laptop tray on the passenger side. I have seen lots of floor-mounted versions but it would seem to me that the bolts that are in the passenger grab handle could be converted to RAM Mounts...then add a detachable tray.

Then add a tray. Maybe something like this but was thinking of tapping into both bolts for strength.
