Does anyone know if the factory AGM 75AH battery that comes on the Gladiator is a deep cycle or is it just AGM? I will be running a fridge and some auxiliary outlets.

Most likely a standard AGM battery, only place your likely to get a deep cycle battery is buying a RV not a regular car, truck ect.

I'd just invest in a second battery set-up or get a solar generator, like a Jackery or Bluetti. I think getting the portable power station is better though, its portable, easy to move from vehicle to vehicle, can be used on the beach or wherever you want. Its not tied to the vehicle. Yes, they are a bit pricey, but they are getting cheaper and cheaper these days and more powerful. For a second battery set-up, your talking about installing an isolator, cables, fuses, inverter, and a solar charging controller, plus the cost of a good deep cycle or lithium battery. It will add up to more than a good power station will cost you. The new power stations have all that built into them already, the good ones anyway. Since you want to power a fridge, be sure and get a power station with a 12v DC regulated cig output. It will keep the voltage at 12v as the power station drains which your fridge needs.

The second battery option for your gladiator is nice too. After it is installed, it is a leave it and forget it deal, always there for you, especially if you have solar panels on your rig for those extended stays, but you can plug in solar panels to the power stations too. Do your research and find out what best fits your style.
