So after a year of owning the 3rd row and beaching the rig a lot, a field report.Teraflex has a kit to put a JK back seat as a 3rd row in a JKU. I think that might also work in the JT.
In the JKU with the seat set up as rearward as possible its not for adults. Children yes, dogs must assuredly yes, ever groceries. But not adults.
With the seat flipped rearward its dogs and groceries only. Even children's feet don't fit. Dogs however are good to go, the latch points for cat seats and the belt clips are outstanding for dog harnesses.
If you were to do this in a JT, let me be the first to shake your hand and then while tugging you close knee you hard in the bits. With no roll over or sun or weather protection, anyone who rides is gonna get really pissy real fast. And this is from a guy who ran a skeeter ridden mud hole of a trail in a JKU with the entire interior stripped, no top and no doors. The hate will flow through the sliding window like heat from a furnace.
Now if its for the doggos, provided you have a cap it should be fine. Anyone who makes the dog ride commando should be made to take a long ride lashed to the bed to see how it feels.
