285/75-17. It's a 34" (only a half inch less than a "35") and is the right width for your 17x7.5. I'm running that size of a Yokohama Geolandar M/T with the Mopar lift.

No complaints at all. Got it for $1200 and at the time it was the only spring lift available besides RK as far as I was concerned (I won't run skyjacker, RE, RC etc) Ride is great and I can build off of it when I want to. Only thing I added to it was the JKS quicker disconnects.

You shouldn't need a lift or leveling kit with the 255-80-17. Keeping the body height lower should help mpg. and handling. I have the wider max tow axles, but don't believe anything would come close to rubbing with regular sport axles either. I guess people on the forum call them "pizza cutters" because they are relatively tall and narrow. As a bonus, I saw no loss of mpg with them compared to the stock Bridgestone AT in 245-75-17. I did adjust tire size with my Superchips Flashcal. I saw no change in steering effort--the weight per tire is between that of stock and Rubicon tires.

Update, for anyone that was interested - finally got my hands on and installed the AEV 2” spacer lift and put a set of 285/70R17s on. Extremely happy with the ride quality and look of it all.
