Do I need to remove the changes I made with my Tazer and remove it prior to having the dealer update my software?
I would unmarry and remove the Tazer beforehand, yes.

If you have a collaborative dealer, I would have them flash update your original and new ECM with the same files, as OS upgrades will make things apples to apples if for some reason you need to plug the stock one back in. I also emphatically agree in using a dealer replacement ECM as the purchased unlocked ECMS have had some unexplained behaviors that can slow or halt successful tuning.

Awesome advice will do. Going to contact my local dealer today. When talking to the dealership are there any tips or things to avoid mentioning like tuning and such?

I have done this multiple times at my dealer and they were curious as to why but ultimately happy to make the sale. Never have had an issue.

Dealer in CA quoted $265 to flash each ECM so about $528 for updated OS and $205 for a 2nd ECM. Does that sound about right and/or fair?

Yeah that’s about right. Hour shop time for each.

I think Dave and I could talk this stuff for days, plus he’s in Illinois too so we could probably both mutually complain about our state at the same time 😆

Not sure it helps, but just received a ECM from @AllMoparParts.com for $156 shipped to my door.

So do you just send that in to be programmed? Then install when you get it back?
No. I get a "blank" ECM from MOPAR. Take it to my dealer to get my installed ECM cloned to the "blank". Send the clone to HP tuners to get unlocked. Then work with @bmpcamry09 to start the tuning process. His write up on the process is good.
