Does anyone know what is the safe offset/backspace needed for Clayton 3.5" Overland + lift kit with Falcon adjustable shocks?

I have read many post where people recommend 17" wheels vs something bigger like 18, 19 or 20 for 37" tires. Why is that? Also, for offset, I am going with -12mm / backspace 4.53mm. From research it looks like it will stick out about an inch or so? This is the wheel I am considering: HELO HE878

The shock that I want are back ordered for few months. Is it possible to use the stock Rubicon shocks with 3.5" lift until the shocks come in? I know there is an option for Shock extenders but not sure if it will go with a 3.5" lift and if it's even safe to do that.
