I pulled about 4700# up 7-9% grades in the summer @ 60mph. 488 gears/ 3.6 gas. No cooling issues at all. Trans or motor. Diesel should have no Motor or trans issues. Your towing restrictions are due to suspension and axles. It's not Motor performance related.
Read some posts about how noisy it is on the Interstate ( While closed). Are those correct statements? When I bought my JT I test drove a Sahara JLU that had that $4000 fully retractable top. It wasn't noisy at all.

E's are better for hauling loads or trailering. Much more stability due to less tire roll. Also better for airing way down without concern of splitting sidewall or breaking bead. They are pretty much better at everything except for Sand wheeling.
Best you can get would be the GAIA GPS that is now available through Apple Car Play. Has complete TOPO capability Nationwide. Every goat path is on it. I think you have to pay $39 a year for it.

The future holds much higher gasoline prices than Diesel. Watch this over the next year. I predict $4.50/gal gasoline prices by this time next year. Diesel $3.25.
With my 35" tires. Perfect IMO. Gives the low end grunt your looking for and a crawl ratio that's needed off road. Also will be just fine if me or some future owner wanted to go to 37's. Highly recommend. If you have larger tires and still stock 373's , 488 will put a big smile on your face.
