The only sand driving I’ve done was in my old truck on Nokian Rotviian AT aired down, which did great.
I would imagine most any all terrain would do well if you air down.

As dumb of an idea as I think this is, you could theoretically do it if you:
Install a stand alone, full system ECU (like a Holley one)
Have a custom wiring harness
Have a custom tune just for this

I just put 35" (315/70/17 size) BFG ATs on my Mojave (no lift).
Did a ton of research on tire weight; the load range C BFG's actually weigh less than the OEM Falken AT's. So if you can find a wheel that is relatively light then no worries about tanking any performance.

My recommendation is to do a normal 4 wheel rotation. This is what I'm doing.
If you want a spare just throw a cheap (either used or a cheap brand) same size tire on the OEM spare. It's only supposed to be used in an emergency so it should be fine to save money. No one is going to see that...
