The Mojave skid is unique because of the remote reservoir’s placement; protected tucked up underneath. I also recall reading it’s the explanation for why there isn’t a “sway bar disconnect” option on the Mohave.
Based on your described use I think the Sport S w/Max Tow is the your best bet. It is really over engineered for how you plan to use it. But, it is just the right platform to grow on. I think once you have a few smiles and miles behind you will find yourself looking for reasons to go get dirty...

I love the idea of a two door with like a half cab jump seat area, and a 6.5 ft bed. I would keep the under-bed spare standard. But I could see a style side bed with a side mount tire. That, would be cool...
Of course the A pillar folds down on the JL and JT so... We still aren't looking behind us with the mirror on the A Pillar. How a about here? The aftermarket has some solutions that utilize this area.
