Ground to axle would be tire size. Use axle tube to some other point above. I’m looking to determine exactly how much lift came out of this kit.....

I use ”bottom out” and “top out” interchangeably, so just be discerning which is which. edit- here, this is from Fox that has a modeling of what we are talking about.

Shoot for 6-6.5°; and check drag link/track bar alignment.

6.8 is higher than i would target; but others may have differing opinions. A little flighty could be issues with insufficient toe-in or misalignment of drag link/track bar; or something not torqued to spec. You should be able to hit a bump with one wheel at interstate speed with minimal...

They dont to return caster to stock range. Prevailing wisdom is the caster in excess of stock specs drives more gooder-er-er.
