I work directly from my tailgate almost daily. Starlink on top of the SmartCap for the various rural locations we like to do business with. A small table stored in a net underneath, where the overpriced SmartCap table would normally mount. Similar to the image you posted. And a nice camp chair...

I also have an SA-made Defender model, and it's been absolutely great. The only oddity I can attest to is that mine apparently came with incorrect (aka lower-rated) gas struts on all the doors. I was not even aware of this until the SmartCap support folks pro-actively decided to ship me stronger...
It's hard to beat the powertrain in the Roxor for pure function on our property and just general fun putting around the mountain roads around here. Old school 5-speed manual paired with a barely-stressed diesel is about as good as it gets for my purposes. Tons of torque, impossible to stall...

I don't normally consider myself "cheap", and that bag DOES look nice... but damn, I don't think I own anything small enough - and that I’m willing to store back there - that costs more than the bag itself.

It's one size fits all because it's just weather stripping. Head to Lowe's/Home Depot/Ace and just grab a roll on the way to wherever your travels take you next.

Definitely not. Although, the skinny Baja Boss A/T's aren't much wider (10.1" section width, 8.6" tread width), and they are. I switch back and forth between a set of those on stock Rubicon wheels and a set of 37" Firestone mud terrains on Mopar steelies, both 17x7.5.
