yes theoretically you could, but then they would/could likely claim when you returned that you damaged it by driving it when told not to. In which case your warranty related to those items would likely be void. It does not seem like a smart path to take, IMO.
Unfortunately I can't help answer your question, but I did want to say thanks for posting this as I wasn't familiar with Jeep Adventure Academy previously. I looked it up and it looks like a lot of fun.
This is just a guess, but due to the safety aspects of modifying an automated driving system, I would assume they keep it locked down to avoid liability.
