Some people are under the delusion that if they drive with the tailgate down they’ll get better fuel economy. They think it causes less drag. But in fact you get better fuel economy with the tailgate up as it was designed.
I’m 28 as well and don’t fit the mold of what people think of as far as millennials go but we’re definitely very much in the millennial generation. Early 1980’s till 2000 or so.
Correct if the stock tires on an Overland are 31’s. I don’t know the size off the top of my head. But yes, stock (Red), lifted with 35’s (Black).

I definitely felt the loose steering when I test drove an Overland, but not as much when I drove the Rubicon. Like others have said, there are a ton of threads on this issue on the JL forums.
