The est ship date is when the truck was planned to come off the production line. Not when it is at the dealership or even when it leaves the plant. It could take up to two weeks to get to you after it comes off the production line. I am sure by next week someone will have one.

I had an almost fully loaded 2013 JKRU and priced a 2019 JLRU with the same options. It was only a 3k difference MSRP to MSRP and the JLRU had stuff STD that wasn't an option back then. I think you might be a little bit wrong in your numbers.
