No problems at all. The Scrambler bulkhead is actually just sheet metal bolted to the body, it’s not like a truck bed. Very easy to remove with negligible effects on flex (mostly because the whole vehicle is just sheet metal on a frame).
This is what I've wanted as well. I removed the bulkhead of my Scrambler and added back seats, but there is not enough room for my dog and gear. Another way of looking at it is that I want a JL with. 5’ bed behind rear seats and no bulkhead.

That thing is the perfect size, but I wish it locked to the truck somehow. I have no doubt the magnet is great, but it allows a thief to grab it while I’m in the ocean and my truck is in a parking lot.
That's not a rolling hard cover, I believe it is the @Maximus-3 decking system. They are hard planks that slide in to form the deck, but they do not roll up to the back. It does exist, however. I'm not sure it is on the Maximus site, but you can call them and get info on it.

This seems like a pretty big deal - having it roll forward to the windshield seems a bit odd. Rolling it back to be behind the rear passengers seems pretty logical.

Since you’re comparing it to a Scrambler (I have an 81), I don’t care if it has 2 doors or 4, I want removable bulkhead like the Scrambler, so that the whole thing is open. That’s my perfect vehicle.
This is something vendors need to balance. If you’re going to go public and get interest and input, you need a plan to set expectations on timing and not go radio silent.
