When I switched my Wrangler JL to a Gladiator Mohave, my auto insurance premium actually went down a little bit. I don't know what algorithm the insurance companies use, but I am thinking safety maybe one of the factors?
I was also surprised - there are some heavy bars and some metal in soft top. But the full hardtop kit weighs 85lb whereas the soft top kit weighs 124lb.

On JT, prefer the hard top with the Sunrider to avoid the "man bun" look.

IMO, yes. Less wind noise, more durable material, looks richer and stays darker (does not fade easily due to elements). But vinyl is easier to clean. And in my experience, insulation is better with the twill material. Does not get too hot in the summer inside.
I added Bestop EZ-Fold Black Twill bed cover to match the twill Sunrider for hard top. Didn't notice any difference and most of my driving is on the freeways.
