Are there any recommendations for tire/wheel combos that are more appealing to put on the gladiator sort s that won’t have a huge impact of towing capability? I’m also not looking to do a lift or anything outlandish like that.

“Appealing” is so subjective. I like the looks of the raw Max Tow in its maximum tow capable fully functional/towable factory form. If maximum towing is your goal find some Max Tow take offs. In order for the factory to achieve the Max Tow tow rating the Max Tow was designed very specifically with weight saving and specific equipment (4:10 axle, tires, wheels).

I got Falken AT3W tires in 255-80-17 for my max tow, but they are also available in stock size if you don't want 33" tires. Different wheels are an appearance thing.

Get some Overland take-offs. They are a similar sized street tire on nicer wheels. They are 18 inch wheels, so there's a little more room around the brakes. Many don't like them, so you should be able to pick up a set for not much.

Try to keep same tire diameter to keep braking capability and the final RPM to road speed ratio.
Wider tires will mean more rolling resistance (dropping mpg and pulling ability depending on the tire tread design width, etc.)

Most changes won't make a difference big enough to feel but it's all a matter of "how much/how far" you change things.

I thought max tow was sub-32" - is that not correct?
Overland tires are 32.2"

Going from the street tires 245/75/17 to all-terrain 265/70/17 gives about two inches wider tread (partly from being all-terrain), but nearly identical diameter for no loss in towing ability. And 265/70/17 is a very common size, easier to find a replacement in an emergency.

Basically what I did - reduced mpg by virtue of the extra rolling resistance A/Ts add but can't say it is any less capable. It looks better, better traction (felt safer towing in wet conditions)
And since where I park my truck at events could be tricky after rains - I am assured of getting back out more easily.

Having said the above, if I lived closer to offroad trails I'd be strongly tempted to get taller tires and regear. As it is I have a good amount of armor under the vehicle to make up for its stock height. And the stock ground clearance is pretty sad for what is supposed to be an offroad vehicle.

It's supposed to be a truck that's off-road capable, not sold as an off-road vehicle. Clearance on mine is about the same as our jlur (on flat ground)
I found as much room under my Overland when installing the power steps than I did under our JLU Rubicon when installing the power steps on it.

Correct on the sub 32" The Bridgestone dueler's measured in a t 31.5" I changed them out at 5k for larger 33" tires, don't regret it especially when getting into some mud but i'm still amazed at how much traction those Dueler's got off road, not to shabby for a factory tire.

Yeah, that's the number I seem to recall
So the max tow got 31.5, the Overland got 32.2 and the Rubicon got 32.8
