My first empty seemed to be more than it's been since then.
There's probably a decent amount of latent oil, fuel, water vapor in the loop when you install the can.
I'd run it another 500 miles and see what you get.

That’s normal. It’s shocking to see how much oil gets sucked into the intake without a catch can.

Sooooo, this is how much oil I have in the newly installed catch can after approximately 400 miles towing a 4000lb camper.
That’s a 4oz container.
Anyone think it’s something to be worried about!

I've never heard of a catch can. What is it for?

If it’s in that can it’s NOT in your engine. Keep it topped off properly!

If you want to avoid filling the catch can to the top and having to empty it frequently do what I did and add a 4ft. 1/2 drain hoes with at ball valve at the end. This will double its capacity and prevent the can from filling up and oil getting sucked into the engine.
I drain mine every 1000 miles and have never had oil in the can. Its all in the drain hose.
Running the motor hard and hot like towing will increase the amount of oil the can will collect.
You are turning more RPMs per mile, Running more fuel though the motor and the oil is a lot hotter and producing more vapor in the crank case.

I see what you did there. Did you cut off all the intake baffels?

Yes I did. Redneck “performance intake tube”. Sounds good. Sounds even better with a snorkel. Sadly I don’t have a snorkel on this JT (Mojave). I made it when I had my Sport.
I did the same but I used rubber plugs to delete the baffles.
