In a manual transmission, brake pressure doesn’t matter at all. Push the clutch, outta gear, come to a complete wheel stop, “ESS!”push clutch restarts engine.
ESS will turn off the engine with A/C on but after the battery starts to drain it kicks the engine on to recharge the battery. ESS doesn’t turn on if only a very short trip as battery not up to charge, toggle through your screens it will state if ESS is ready (or not).

I cannot swear to this, but my understanding is that there has to be a certain amount of brake pressure for a determined time to activate the auto stop. Maybe you are lighter on the brakes when you stop than she is? I know when I forget to turn it off in my Mojave, it rarely auto stops.
Second this - I can brake gently and come to a stop with just enough holding pressure on the brake to hold it on place and the ESS will not engage. If I'm at a really long light I can depress the pedal to "full" pressure and the ESS will engage. That being said, I normally disable it as soon as I start the truck. The slight hesitation and small lurch that follows when I full release the brake bugs me...
