Someone asked this question before, and I can't find that thread, so here's a new one!
Looks like the front and rear cameras do work while driving, but only for a few seconds.
Front for about 15 seconds, back about 1 or 2 seconds.

I suspect they are going under 25MPH... no, they are going over 25MPH because a few seconds before they show the Off Road Pages and Pitch & Roll are disabled. Those do disable over 25 MPH.

These cameras arnt made for fast speeds. There for slow speeds like backing up or seeing what's in front of you like kids or trash can. Why would you want to look at the camera going 25+mph?

I personally like having my rear camera on while I am pulling my trailer. When traveling back from Overland Expo last May, I noticed smoke behind the vehicle. Saw it first on the screen and looked in my mirror, nothing. Immediately started slowing down and pulling over. Smoke didn't appear in my mirrors for a few seconds. May not have made a difference, but those few seconds could have. One of the trailer hubs had seized and by the time i stopped, it was on fire. Probably still would have safely stopped without the camera but any time saved is good in my book.

Just my two cents...cheers!!!

Now that in all aspects would be ok and never thought about looking while towing.
