Telemetrics Data Logger (Pitch, Roll, Gear, GPS location, etc)

I'm looking to capture data from my 2024 Gladiator Rubicon that I see on my center console (pitch, roll, gear, transfer case status, etc) so I can use it as an overlay to gopro video shot while on the trails. Seems to be if the data is on the screen, it's something that exists as a loggable data point. My only question is what can I use to capture the data to something like an SD card and when I'm at home in post-production I can use it in a telemetrics overlay.

I see there are many tools like Tazer, JScan, etc that allow us to do some advanced tweaks to the Jeeps, but do they have a simple "capture all that I see" mode?
