By the end of the trip, you'll have some scrapes on those skids but they should serve you well? Your rig looks like it's good to run up to 6-7 rated trails in Moab. You COULD get away with 8 rated trails but since you're driving it out/back, I'd use some discretion. Obviously, your rig, your vacation and maybe your only time out here, do what works for you.
Don't bag on some of the "lesser" trails. There's some pretty cool stuff that can be reached on very well maintained roads. To me, a sunset or sunrise at Deadhorse Point is worth the effort. That's a paved road. It's straight across from Chicken Corners. For whatever reason, I like being on both sides of the river in the same day. You won't hit your skids that day (and likely wouldn't even need 4x4 but I like it on Chicken Corners just for the engine braking aspect on Chicken Corners---I think, it's been a few years since I've been on that trail)
