Pentastar makes ~90% of peak torque from 1800 rpm to 6000 rpm. I don't have the chart in front of me but it's very flat. It's lower torque relative to the diesel, but it's actually a nice curve.

In my opinion it's done so that the exhaust pulses from opposite banks don't meet at the same time where they merge into one pipe. You could definitely delete it with a dual exhaust, but should keep it if not.
They seem to be ok unless you work them hard.
Once you get out of warranty some of the repairs can be very expensive. Injector failure is not uncommon on any diesel.
To me it wasn't worth it.
You could probably get away with using the 5k on a lightly modded JT. I've seen videos where they test it with a sheetload more weight than they rate it for.

It's horrible anywhere with hills, like my area. It uses the brakes going downhill and feels like it uses 100% throttle uphill.

Not everyone cares about mpg, but I bet it would be more like 14-15 than 10. I'd prefer not to have all that complexity of hybrid or modern diesel.
Good ol' pushrod V8 is fine with me. I'd be happy with any V8. I'd probably get the 5.7 if it was an option.
