It's probably just air "whooshing" in.
Backfire through the intake is very loud, and I've only seen it when the distributor was put in way off, which doesn't apply here.
If you really believe the mixture is off, start monitoring your O2 sensor readings. There's several OBDII apps that can do it.
I'm not saying LS is the way to go, and I definitely would not pay 20K for a new one that didn't keep all OEM functions.
I'm all for free market pricing. Hopefully costs come down after R&D is recouped. I would be happy with a low mileage takeout and an extra 10-15K to spend on something else.
45 hours seems fair. I think it's probably less after you've done it a few times, but it isn't outrageous.
The last swap I spent more time on the wiring harness than anything else, but I was able to save a lot of time because I didn't have to fab anything.

Webasto makes the hard convertible tops for a lot of high end vehicles. I think they make the tops for all the euro manufacturers and I know they at least designed the C8 hard top convertible. Kinda surprised they are having issues.

When I had my JK with the manual there were definitely times where an in between gear would have been nice.
Learn how to rev-match if you aren't already, and don't be afraid to drop 2 gears. You might have to experiment a bit to see what works.

I haven't had mine over 85, but no trouble getting there with the 8speed and 4.10 on stock 33" tires. There really isn't much difference in seat of the pants feels between ~60% and 100% pedal.
This is one of the inflationary feedback loops. People expect higher prices in the future, so they buy things that aren't immediate needs, but that causes more inflation.
